Got up at 5:00 am to make the commute to Brookshire's in Groesbeck for marked down pork bellies that had todays date, 65% off off regular retail puts me in my happy place.

Yesterday, I picked up a couple pork bellies from a small local butcher who raises their own hogs. The hogs were butchered 2 days ago.

Bacon is what I'll do with them seeing how well my last batch turned out. The are really killer smoked the chilled sliced the braised in a port wine reduction. Hunter would say smoked for burnt ends.

Mine will be bacon.

If I make some pork belly burnt ends, I'll be the only one eating them, as my wife can't handle the fat content. She can handle it if I make them from chuck roast, though.

Bacon, for those adventurous to take the plunge........

I have 3 pork bellies in my freezer right now. As soon as the f***ing weather straighens out here in south central MN, I'll be 'makin' bacon!

I use Morton Tender Quick salt, no red pepper flakes & do not re-pepper mine after the rinse. Pecan wood because Texas y'all.

The wife cousin is playing with a Christmas smoker, and will be doing bacon. So far he smoked a bologna chub. Knowing what bologna chub is sold around here I'll do a hard pass. I mentioned come over on smoke day. That just made me wonder if one replaced the maple syrup with bourbon as he likes the brown poison.

I forgot to mention I have a plastic container with lid that holds my curing bacon, then washed out the finished bacon.

I made bourbon maple bacon, and it was outstanding. The only Bourbon I had when I made it was a honey bourbon from a place outside Durango, Colorado. Mix everything up into a paste and rub it into the belly. I put the belly inside a 2 gallon zip lock bag then pour the stuff over it and rub it in while it is inside the bag. Only takes about 1/4 cup of the bourbon to get the flavor into the bacon.

So, keep the maple syrup but just add some bourbon to it.

We ate the bacon you gave me on Christmas morning. It was the best tasting bacon I have ever had.
