It rained off & on all day here. Since my smoker is electric and the control panel isn't waterproof, I didn't smoke any today. I will be smoking a pork butt this weekend, and these bacon wrapped onion rings will be made & smoked also.

I have made them in the past. Thinner bacon cooks better on these.

I tried to swing into the local Fun Shop my buddy owns but, he wasn't there this afternoon. So I stepped across the street to the local meat market. In and amongst the $48+ worth of meat I bought, there's a 1.5 lb. package of Raspberry-Chipotle marinated Bacon.

In the morning (no work for me tomorrow), I'll run to the grocery store and grab a 1 lb. package of thick sliced 'apple or hickory smoked' bacon, 4 sweet Vidalia Onions.

Once the rain stops tomorrow evening, there's a 8 lb. Pork Butt going in the smoker for an overnight smoke (pulled pork sammiches for the family gathering Sunday afternoon), then the bacon wrapped onion rings will go in, around 11 am Sunday.....

If I found this thread earlier I would have almost driven to MN to be a uninvited guest at that meal. I think my heart clogged a little just reading that link.
