Thumbs up Work Sharp Sharpeners Guided Sharpening System

I received this knife sharpening system for my birthday. It consists of 2 diamond sharpeners (course and fine) and ceramic sharpeners.

The there is a holder that stays stationary on the table and can pivot, depending on your blade shape or be locked down.

I'll post the video they put out below.

What I can tell you is that it flat out works. I have a JA Henckels chef knife set that was given to me in the late 80's by some German friends. At the time, you could not purchase these knifes in the US. They were $800 back then (I know what they were worth because Customs charged me duty on them, even though they were sent as a gift.) Really high-end knives. But I could never get them quite sharp enough using a whetstone and a hard Arkansas stone. I was going to actually send them out to be professionally sharpened when I got this knife sharpening system.

Following the guidelines in the instructions, I sat down and sharpened each of those knives to where they will slice a sheet of paper. From the paring knife to the big chef's knife. So, if that system was going to be a dud, those knives would have told on it.

I like to have all my kitchen knives as sharp as possible and run them through the steel rod before cutting anything, my problem is I'm too lazy to clean them and just throw them in the dishwasher and that does not help keeping the edge sharp

The set I have came with a very nice sharpening steel. Problem is after so many years and several different people using the steel on the knives, they always use a different angle. I'm surprised I could even cut butter with some of them. I like to use steel to touch up the edge. If I'm the only one doing it, it stays sharp a whole lot longer - especially if the kid who worked as a waitress and saw the cooks using a steel so-is-now-an-expert, doesn't touch my knives.

The most tedious one to sharpen was the serrated tomato knife. It took a while, but it got sharp.

The steel helps align the edge, you're only supposed to run it like 6-7 times per side and softly, don't rub it hard.

I use a jewelers file on my knives followed by a steel a few swipes. Use to have a diamond jewelers file that was real good at sharpening, but lost it.

Nothing better then a set of wet stones & knowing how to use them. I used 2 different steels while working a medium & a diamond. The medium is just about smooth.

Use a leather like barbers strop when your done sharpening to get any minute burrs out. It won't necessarily feel sharper to the physical touch but it dang sure is.

Great set up Sanders Work Sharp sharpener and superior knives Henckel.
I just use my Japanese wet stones and a diamond flat stone for touch ups. Watched a dozen vids. like the ones Merc put up tried them all and found one that worked best for me.
Key I found with mine is the right amount of pressure the angle and consistency on both sides. Emergency camping no sharpener? A ceramic coffee cup knife run over the top lip or hell even the side glass widow on your truck.
Razor sharp with those? Nah but sharp and good enough to skin that deer.
