Pinto frijoles
I am soaking some in water overnight to cook tomorrow. I don't know exactly what we'll eat with them yet but I know for sure there will be some jalapenos and cornbread involved.

Beans and cornbread - what else would you eat?
I have some beans in the freezer.... hmmmmmmm I'm about the only one in the house, who will eat them. So, when I get tired of eating on them, I freeze them until I get that craving again.

The beans came out great. I sauteed a chopped onion in some olive oil. Halfway through cooking the beans I added cubed carrots and a couple of bouillon cubes for seasoning.
I don't cook meat in the beans because of my peskytarian wife. |

Sometimes I may throw in a handful of frozen corn kernels or maybe some fresh tomatoes or both. I like for each pot to be a little different.

Have you ever tried beans with chicos? That is my favorite way to eat beans. Chicos are sweet corn dried in an horno. I think it's mostly a New Mexico thing.

I have never had chicos (that I recall) but I am game to try some if I can find some around here. Thanks for the tip.

All the above sounds excellent, my Doc. says that I might get some strained foods next week. I'm out of the hospital after stomach surgery.
