Soft-boiled eggs
I love eggs any damn way, but since I love rituals, I often enjoy being persnickety and fixing soft boiled brown eggs with wheat toast points and all the associated egg holders/spoons. The key is to let the eggs sit out on the counter for at least an hour, than boil 'em for exactly 3 1/2 minutes. Wife says I must be part weasel............

Yup 2 minutes . I love egg's too, favorit is sunny side up. But heck I ate scrambled green eggs out of mermits in the Army.

For poached eggs. Put a teaspoon of vinegar or lemon juice in with your gently boiling water.
It will keep the egg together and the vinegar or lemon juice scent will cook out. A pinch of salt, keeps it from sticking too the bottom of the pan. Big commercial restaurants half cook them and place them in a pan of iced water. When ordered, they drop them in the hot water too quickly finish, thus saving time.
