It might be the meat cutter in me, but I would totally remove the back bone, instead of splitting it. The backbone would be frozen for soup stock.

Why bother cooking a ?
For $5 you can get a big plump oven roasted one at Costco.

I don't eat the skin. I take the skin, drippings and bones. through them in a stock pot for about 40 minuets or less. The Broth is fantastic.
I then take German Egg noodles. and cook until soft. I train and wash them. I hate the starch. I then put them in the chicken broth add a stick and a half real butter, salt to taste and take all the small bits of chicken and put them back into the pot. I put a sprinkle of other things in it. Fantastic chicken Soup. Then I have enough chicken for 4 meals and a couple of sandwiches on top of the soup.

I can't buy the chicken for that price.

I also like to take boneless, skinless chicken thighs and cover them in the crock pot with green enchilada sauce Cook on high for 4 hours and the chicken melts in your mouth. I rinse the sauce off and use it in other cooking. It is easy to shred when you cook it this way.

Just spatchcocked and roasted a turkey yesterday.
13lb turkey, roasted in 1hr 45min.
Crispiest skin, and juiciest white meat of any turkey we have ever had.

Once you spatchcock your bird, you'll never go back
