Not sure on the Manta Bears? Sting ray, Skate was often sold as scallops. Clean the skin, take a round cookie cutter and punch out round scallop size pieces.. Shark, halibut, salmon, and trout. Those are the fish I prefer seeing on my plate. Especially halibut.

I got spoiled when I worked offshore in the Gulf of Mexico.
Developed quite a taste for red snapper and grouper. When we'd salvage a platform, we'd have to blast the legs out of the mud. Of course, when you set off high explosives underwater, it does a number on the fish population and they float to the surface. Captain would give us 15 minutes to get in the water and string as much up as we could. Sharks know what that loud noise means, too. I'd fillet them, and cook them on the grill (we had a big barbecue grill on the aft deck). I do love some fresh swordfish and shark steaks, too. They are both similar, unless you get a cut of shark with some dark meat in it - very fishy. I also love fresh tuna steaks. Closest thing I can get to that is the flash-frozen stuff from Trader Joe's. They were selling some tuna steaks at Smith's (a Kroger store) the other day, and they were full of dye to make them look pink, and were not even close to fresh. Remember, if it smells fishy, it is already rotting.
