Default Hush Puppies

Here is a food that has quite a history. Some will say it dates back to the American Indian tribes about the time corn (maize) was starting to be grown. The Southern soldiers definitely used them to "shush the pups" while on patrol or being approached by the enemy. Runaway slaves would use them to shush dogs they happened along.

Justin Wilson's (who didn't get a kick out of him?) recipe:

Ingredients

* 2 cups cornmeal
* 1 cup plain flour
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1/2 teaspoon baking soda
* 1/2 cup parsley, finely chopped
* ground cayenne pepper (to taste)
* 2 eggs, beaten
* 1 cup buttermilk
* 1 cup green onion, finely chopped
* 2 tablespoons hot bacon drippings or oil
* 1/2 teaspoon garlic powder (to taste)
* Deep fat,or veggie oil for frying

How to make it

* Combine all dry ingredients. Add eggs, buttermilk, onion, and oil or bacon drippings. Mix well. Drop in deep hot fat by spoonfuls and brown on all sides.

There have to be as many different ways to make these as there are people on the planet, so just experiment until you find one that fits!

Ok, now I just made myself hungry...

Yes! But they're fried or deep fried. They go along with a lot of dishes, chili, fish (especially), stews, pork roasts and whatever. Serve with honey, blackstrap molasses, maple syrup or just plian with a little butter on them.
