Default Poached eggs done properly.

Now no smart ass jokes. This is serious.
O.K. here we go.
Boil a pot of water too a gentle boil. Not like Mt. Saint Helen.
Add a teaspoon of lemon juice or vinegar and a dash of salt.
Crack egg and place in gently boiling water.

The lemon juice or vinegar helps too hold the egg together. Salt helps it stay from sticking too the bottom of the pot. Cook too desired consistency.
Remove and eat.
If nobody gets smart ass. I will give you the recipe for "Daddy O egg on toast."

Used to eat an occasional poached egg.
But I missed the added taste of bacon grease.

My wife poaches eggs that way and they are good. When I try it I don't get enough English on dropping the eggs in the water and I make a mess.

I use a microwave egg poacher and it works pretty good.

I like them too and feel the same way.

There was a diner, can't remember where, but they poached the eggs, then fried them lightly. I liked them on grits or flap jacks.

4th, isn't that the only way to do them?

I have washed dishes in some of the finest restaurants in the country.
"Hobart engineers we called ourselves."
Always peeked at what the chefs were doing during our breaks.
Lot of my co-workers went outside and drank. But hell that is their problem.
Anyway. Never heard of a quick fry in the pan. Sounds good.
If you want too have the poached eggs done early and ready for the family.
Cook them half way, then place them in iced cold water.
Stops the cooking. Then when the family wakes up. Quick drop in the simmering hot water and their done.
Poached eggs done properly can make or break a marriage.
Do it proper.

I do say you guys have been quite the gentleman.
So here we go...
O.K. Take the bread of your choice. Get your frying pan too about medium heat. Butter both sides, you will understand in a minute here.
Oh wait. Sorry. Getting excited and ahead of myself here.
Poke dime size holes in the four interior sides of the bread, just by the edge. One quarter "coin" size hole in the middle of the bread.
Gently brown one side of the buttered bread. Now flip the bread toasted side up. Crack your fresh egg on the bread, cover and cook slowly as desired.
Wallah. Your wife will love you. Your kids will speak of the great chef their Dad is.
Daddy "O" egg. You can do it.

Can I put some cheese on top too?

Salted or unsalted butter?

Do you cover just the egg or the whole pan?

I like poached eggs mainly for eggs benedict , eggs oscar, eggs sardou & so forth. I have yet to manage poaching in the pan of water. Threw away the egg poaching pan last year as they were sticking to much. I have added water to a skillet with butter/margerine & done eggs that are kinda fried poached.

I can see your going too need some serious help with your cooking skill aviator. No insult intended. O.K.
Hold up the hand of your choice. Take your index finger. That would be the one next too your thumb.
Now. Poke the bread with it. Oh Wash your hands first.
Cover the whole pan. Not just the egg.
But good question. That was not covered in the recipe.
Next I have an awesome recipe for fried bologna sandwiches with horseradish sauce.
I have too shut down here. The chef is asking what I am doing on my lap-top. Back too my dishes.
A .45 might work. Never tried it. Go with a shotgun slug for the center hole.

A while back I was looking for a way to make poach eggs other than what has been mentioned. Since I only get to have breakfast with my wife on Sundays I usually cook.

What I did was take some of those red silicon muffin/cupcake liners, sprayed them with PAM and put an egg in each one. I filled a sauce pan with an inch of water, brought it to a boil and placed the liners into the boiling water and put the lid on. Didn't take long before they were cooked.

My wife told me that I was goofy, but the eggs came out okay if you like fluted edges. I have seen her use that method since then.
