Default Potato soup

I had a friend that grew up in the Appalachians and he told me that when someone came down with a cold that potato soup was the first line of defense. He swore that it cures the cold. I like potato soup and it makes me feel better when I am not feeling well.

Last week we had our granddaughters over for a few days. The three were in different stages of a cold. Anyhow my wife started feeling puny a few days ago so today I made her some potato soup. I wanted something quick and tasty and it turned out very tasty. I didn't use bacon but instead used butter for the bacon drippings. Here's the recipe:

That's something else good out of a slow cooker. There has to be a ton of recipes and they're all good.

In my last few pots of tater soup I shredded the potato instead of cutting them up into cubes. Makes for a thicker soup without the need for using flour or some type of thickener.

That's the same recipe I use.

I do substitute Velveta in place of the cheddar, because it melts better.
