What keeps the fat from going rancid?

Fat needs two things to go rancid Bluntforce air and moisture. Eliminate one or the other and it will last for eons.
American Indians dried buffalo, elk, deer, etc. over very slow cooking fires, coals or hell even air dried the meats to get all the moisture out of it. Then mixed in blueberries I do believe for vitamin C and yah had a staple that history says lasted for many years as a survival food.

Someone always brings the subject up now and then. Good to have some books on this kind of stuff. I got into cream cheese making back in 2006 for a while.
