Talking I never watch "Cooking Shows" but.....

Today there was a one hours feature entitled;

"The Southern Biscuit"

Dang those people!

Showing all the ways of making biscuits.
What TO DO and what NOT to do.

I do believe MY biscuits will improve a bit!

Only fold the dough FOUR times.
Roll it out quickly, with as few passes as possible, so you can cut the biscuits.

Her remark was, folks just like working the dough and fold it too many times.
Same with rolling the dough, folks just like to play with the dough and roll it too flat.

I make BOTH of those mistakes!

You can also use the biscuit dough for dumplings.
Put the dough on a cutting board and slice off pieces into boiling water.
Cook the dumplings about 20 minutes.
and dumplings.
Make a stock from a chicken.
Add veggies of your choice, chicken meat and toss in the dumplings.
Some good eatin.

My old buddy in Palestine, Texas makes great biscuits from scratch on the cutting board. No bowl! He bakes them in a cast iron skillet. First thing is he heats up some cooking oil in the skillet. Then he coats both sides in the oil before cooking. Any spare dough not used in his skillet go in old blueberry cans from muffin mix (those are the trail biscuit that go with you into the field).

His table is well stocked with biscuit condiments. 2-3 different honeys, molasses, homemade jelly & preserves. He calls butter salve when it's served with biscuits.

I remember my one grandma doing that. Fold four times and don't fuss with it too much and she always had the best biscuits.

I wish that I had payed more attention to my Granny's biscuit recipe. I remember her using a big wooden bowl filled with flour that she mixed with salt, lard, clabber and baking powder. Those were the best biscuits that I've ever had.

I had biscuits and gravy and eggs for breakfast, this morning.

Ever make doughnuts from biscuits? Just deep fry the dough and then roll in cinnamon-sugar when done.

I have never been able to make biscuits. I have been told that you have use the same bowl all the time for biscuit dough. And you can't touch the dough to much before you bake them. I have tried to make biscuits at various times in my life but it is always a miserable failure. But I'm getting that feeling to try them again. Maybe I should have watched that show with you 10 bears!!!!!!

My grandmother is the same way!!! I have asked her, "What is your secret?" But I think she doesn't know herself. She has been making a mess of biscuits 2 or 3 times a day her whole life and I don't think even she knows what she does herself!

The title of that show was "Southern Biscuits" and there was a heck of a lot more to it than what I posted.
All of the different biscuit combinations, from just "Buttered Biscuits" to everything that goes WITH biscuits.
All the different regional combinations of gravies, who eats it the most, what they eat it with, whether it should be served or "shouldn't" be.

Southern consensus was that biscuits go with EVERY dish!
