Default gimme yer tips

The annual biker club chile cook-off is tomorrow. I'm gonna submit my own entry this year as we've won it the last two years with my wife's basic brew and my mojo added last year.

Anyone have a suggestion for a kicker ? Hot won't win but it needs to be warm and last years " Sneaks up on you" heat was great. Obviously i'll go with fresh peppers and onion with my home canned tomatoes. I keep the ground beef on the chunky side. I was thinking about cooking a chicken leg or two in the mix and removing them before serving. What would you all think of smoking the beef prior to the simmering process ? Seems to me a bit of smoke might be nice.
Our entries will be prepared Saturday AM and on the table at 13:00. I know many consider next day chile better but i don't.

I also use ground beef in mine, but I like to give it a little bit of a twist. The beef I plan on using I'll make as hamburgers on the grill first and break them up in it. Gives it a whole different flavor.

Exactly what i was thinking on the flavor. Smoking would enhance that some.

Add a few chipotle peppers (chopped into real small pieces), and brown up some Italian sausage, do not drain (in a separate pan from the ground beef).

Or, instead of ground beef, cut up a large roast into 3/4" cubes.

Got any venison? That would give it a nice, unique, flavor.

Not much time to plan for some of the better chile powders - like those from the Southwest. If you'd given me a week's notice, I could have mailed you some good New Mexico red chile powder.

Once you get your heat up to where you like it, add a tablespoon or two of baking cocoa powder. Just enough to give a subtle chocolate taste.

Flop

We only use Roma tomatoes in chile or sauces. Flavor is much better, no comparison IMO

Other then that chile can be brewed many ways, I'm sure you've worked hard on your recipe.

i have some home canned Romas and better boys. we used some in the last batch we made about a month ago and i agree that there is a difference.

Gelatinous fat! It's what food engineering is about. Cook a fall apart chuck roast in onions & chiles then shred it. Better yet beef cheeks & oxtails.

I do not believe I have ever had real chili. I have had plenty of the stuff with tomatoes and beans though. A search on the internet is no help either since the recipes are all over the place.
