Rolled Roast Beef
I made this for dinner tonight like they show in the video. I didn't spice it the same, though. I made a rub of green chile powder, sage, onion powder, garlic powder, kosher salt, and thyme. (Wife is allergic to black pepper, otherwise I would have definitely used some in the rub.)
I also added cream cheese to the middle. Should have added some fresh chives from the garden, too. Provolone would have been better. Grilled indirect on the charcoal grill at 325-350 degrees with some mesquite chunks thrown in to add smokey flavor. My mother-in-law, who is on hospice for cancer and has no appetite, went back for thirds. I only wish I had a bigger roast like the one they use in the video.
