Blackened vermilion snapper and red beans and rice
I still had a few fillets of vermilion snapper in the freezer from my fishing trip to Florida. So, this is what I did with it.
No recipe. I made it for dinner using Frog Bone Blackened Seasoning. For the red beans and rice, I cheated and used Zatarain's in a box. I would have liked more heat from the spices. I'll add some cayenne to it next time. I followed this guy's instructions: Pro-tip: Cook it outside unless you have a really good vent hood. It smokes like a sonofagun. Total cook time with prep - not very long. Took longer to make the beans and rice than to cook the fish.

I aint had or seen anything blacken in a long time. I mad the inside a small apartment mistake once. Staying in a hotel that night.
