Oh yes, and I use it quite a bit, goes very well on meatloaf and mushroom gravy for Salisbury steaks.

It’s the nineteenth century’s answer to garum. Fermented anchovie juice. The most popular condiment in the Roman Empire. There are videos on YouTube of the factories unearthed that used to make it, modern reproduction manufacture and descriptions of variations. There was spicy to nasty sweet with fennel in it. If fennel, anise and licorice were to exit existence, I’d be happy. Tony and co. wouldn’t.
That Vietnamese fish sauce a lot of you guys probably got a whiff of more than once is the same thing on the other side of the world. When the boat people first showed up two things of note happened. No stray animals for three years straight and a fishy rotten smell over parts of town. Maybe coincidence.

Nuoc mam, the Vietnamese fish sauce, it's different, I've smelled it, never tried it, smelling it was bad enough.

I keep a bottle of it in the fridge. A little bit goes a long ways. Use it instead of soy sauce on things with an Asian flair.

My wife keeps fish sauce in stock, smells like a locker room to me. Don't know what she uses it on though.
I do like oyster sauce. |
