Those Collins Street fruitcakes are terribly rich, but I'd scarf one down in no time flat.
However, I do miss the typical English fruitcakes which are enjoyed all year round, but also usually form the basis for birthday, Christmas and wedding cakes made with a decorative hard icing cover, often with an under layer of marzipan. On other everyday occasions, the icing/marzipan decoration is omitted. https://www.buckingham-cakes.com/english https://www.bbcgoodfood.com/recipes/...christmas-cake https://www.thespruceeats.com/tradit...-recipe-435111 The alcohol content may be omitted if you wish.
