I love fried pies. My mother made the best ones with dried apples, peaches, or apricots.
Here's her secret recipe. 2 cups of flour 1/4 teaspoon salt 4 tablespoons Crisco Add ice water to make a firm ball Wrap in plastic and refrigerate a minimum of 3 hours, preferably overnight. Don't skip the refrigeration, it's essential for a good flaky crust. Filling Put an 8 ounce package of dried fruit in a sauce pan, cover with water, bring to a boil then turn off heat and let soak for 30 minutes. Then add 1/2 cup of sugar and bring back up to a simmer for 5 minutes. Note: You're only going to use about half of the fruit so you can put the rest in a container and freeze to use for your next batch. Roll out dough and cut into 6 inch circles put in a big spoonful of fruit,(like the guy said, don't overfill) fold and seal edges. Fry in hot oil in a skillet until golden brown turning once. Makes 8 pies.

The one convenience store junk food I'm a sucker for are the Hostess Fruit pies.
Your mom's recipe sounds real good. I also want to try that guy's sourdough pie crust for them. Combined with the blueberries and cream cheese....oh, man. I agree with the frying being the better way to make them. It may not be the healthier way, but it sure tastes better. It's not like we are making health food, anyway. |
