Most everything tastes like chicken, right? Wrong! Coot meat looks like and tastes like liver! Even brined, bacon wrapped, and grilled. I'm taking the American Coot off my game bird menu. It can join dove on my "do not eat" list.

Marinate the dove breasts in French dressing a couple of hours, roll up each breast with a half strip of bacon and pin with a toothpick, grill over hot coals until bacon is done.
Serve with a cold beer. |

One of the ways we do Dove is to filet pound real thin wrap Jalapeno and cheeses in the meat the around that a strip of bacon pin with toothpic . Then dip in milk and flour and drop in fry daddy ..........mmmmmmm good Granddaughter calls them Dove ball wings .

We had one hung around here for a while. It tried to join the guineas, but they ran it off. I don't know if it was old or not.

We have 8 billion coots here on the St. Johns river. They used to hunt them and eat their gizzards. Don't hear of that anymore though.
