When Albertsons bought out the Randall's name via Safeway they thought they would do crawfish on the weekends. All they ever brought in were the smallest mud bugs. No one would buy them & they were mostly dead by Saturday. Monday the chinese & vietnamese
would be in buying them bags of stink real cheap.

I stopped eating them years earlier when we use to get nice big ones. Caught a staff infection handling them.

These were from a guy a few miles up the road. He only cooks on Saturday and Sunday afternoons. Has two huge boilers that he alternates from, live ones go into one boiler while he lifts the cooked crawfish out of the other one with an electric winch about a hundred pounds at a time.
There's always a line of people as long as he is cooking. I only got a five pound bag. Lady in front of me bought 80 pounds.

I can only imagine the amount of mud & spice sludge in the bottom of those cookers. I'd only consider eating them if they are jumbo grade. I've had raw elbows from juices running down from my hands a couple of time at crawfish boils were I didn't have to pay per pound prices.

Speaking of roaches the power company had a contractor trimming trees along the easement. I talked to the el hefe & got him to trim the oak off my house for $100.00. It's like the dumped a drum of tree roaches & they all went in my roof vents.

I got hooked on them when I was living in Louisiana. My boss was an old Coon Ass, and a hell of a cook. Only time I called in sick was when he made Nutria stew.

Anyway, one of my clients has an annual crawfish boil in May. They fly in a couple hundred pounds or so of live mudbugs from Lousiana and have a big, authentic boil along with a barbecue and a live band - all in their parking lot.

Somehow, I think they'll cancel this year.
