I recently learned how to steam eggs instead of boiling them. The shell peels right off even if the eggs are stored in the fridge for several days.
Here's how: http://www.simplyrecipes.com/recipes/how_to_steam_eggs/ I steamed mine for 15 minutes before the ice bath. They came out perfect. The first time I tried I put 6 eggs in the steamer and the shells were touching and 3 cracked. I tried again with 4 eggs and the shells not touching and no cracked shells at all. The next few batches will determine for me if touching matters.

Going to try this on my fresh eggs. They are a bear to peal when hard boiled, with their thicker shell and all.

I use that method with a bit of water in a glass.
Shake it until the egg quits the solid sound. The shell is fractured but not the internal membrane. Rub your thumb across the shell and it just peels right off. I finally figured out how/why it works, now I'm hooked. Even showed the wife and she does it now also. She can peel a dozen eggs in just a few minutes.

We've raised chickens for decades. Never been able to figure out the best way to make "peelable" eggs. The best way we've found is to boil older eggs. We might try this recipie.
