Been busy canning
Kay and I went to a farmers market and bought 1 flat of strawberries and 2 bushels of tomatoes.
Sunday afternoon Kay turned the strawberries into 8 pints of strawberry jam with some fresh berries left over for us to eat. Today at 09:30 we started processing the tomatoes for canning. We gave a quarter of a bushel away to her relatives. We finished around 18:30 and processed 23 pints of stewed tomatoes. That should last us a year with what we have left over from last year's canning. We saved all of the tomato juice and strained the seeds and pulp out and have a pot (about 2.5 quarts) reducing for some really good tomato soup. When it reduces to a quart or so it will be ready to enjoy.

The best part is that the flat of strawberries cost $10 and each bushel of tomatoes was $10. |

We found a pressure canner that doesn't use a gasket, but rather a tapered seal that you have to lubricate with olive oil. Brian |

We just got a steam canner to replace the water bath type. Still use a pressure canner for most stuff.

My wife and I used to do some canning. I don't anymore. I just freeze some stuff.
I might start canning some black raspberry jelly this year though.
