Kefir
I just "discovered" this dairy drink. I like it a lot!
Picked up a quart of cherry-flavored, but I bet I'd like it unflavored, too. It has the consistency of, and somewhat taste of, buttermilk. But it has all the goodness of yogurt for your gut. I'll bet it is easy to make. Have to do some research.

Now I could go for some of that.
Don't have to worry about anyone drinking MY buttermilk. Hehehe, they ALL turn up their noses at it when I bring it home. Even handle it like it was some kind of toxic waste. I spring for it at the grocery when it's marked down. Within a couple day of going out of date. Once I allmost made the g'daughter sick. She said it was all clabbered and I should throw it away. No! I closed the carton and shook it real good. Then proceeded to enjoy it. She got very pale and left the kitchen. Sour doesn't matter! |

Princess made a batch last night and it came out pretty good. Have to let it sit out, at room temperature for at least 12 hours.

Saltibarsciai Lithuanian style cold beet soup 8 cups cold buttermilk 1 medium cucumber, sliced into thick matchsticks 3 medium beets, boiled, peeled, and cut into thick matchsticks 2 eggs, hardboiled, sliced into matchstick shapes (as best you can!) 1/4 cup scallions, chopped 1 Tablespoon fresh dill, chopped salt and pepper Garnish: chopped fresh dill Whisk the buttermilk in a large bowl, then add the rest of the ingredients. You may add cold water or ice cubes if the soup is too rich or thick for your tastes. My Mom and Grandmother always use chilled beet juice to thin it a little and gives it a little more color. |

Kefir translates to kefyras in Lithuanian, it a fermented milk you can buy Kefir "grains" which is the starter material to make Kefir on line, some health food store also carry it.
If you make it at home don't use any metal utensils. |
