Taco night at the Czubek Ranch
Made tacos tonight out of left over charcoal grilled steak and pork steak, ground up in a food grinder and added that to some ground chuck, then all the usual spices, garlic and onion and whatever I felt like at the time. Made this a while back and had it in the freezer. Made 4 quarts, so we'd have it.
Made Spanish rice and some refried beans to go with them. Yummy still, although it toned down a scosh. Brian

had the last of the refried beans and some of the Spanish rice for breakfast. Good energy food.

I had some good tacos at a restaurant in Las Cruces, the other day - shredded beef, a slice of avacodo, sour cream on a little flour tortilla. Pretty darn good!

Mexican food is my favorite food and so addictive that I probably need to wear a "salsa patch." It amazes me that much of America hardly knows what it is and hasn't a clue how to make it.
