Default Quesadilla Pie

Time got away from the wife and me this afternoon, I mean with me watching football and her getting wrapped up reading a book and ending the afternoon playing with the dogs. So around 1800 she asked what I would like for dinner. I keep "emergency" recipe ideas for short notice instances like today.

After giving her three choices she selected quesadilla pie. She was born a Texan and spent some of her younger years living in mexico, so she loves mexican food. We had fun making it together and sharing a few Oktoberfest special beers, import and domestic.

We followed the recipe for the most part only substituting whole wheat tortillas and using "Crumbles" which is a soy based substitute for ground beef. We also used zucchini for the summer squash.

The recipe was simple, quick and we saved it for future use.

Damn, that even looks good, RTO. I've et my share of quesadillas but always been too dumb to think of getting fancy with this simple dish.

I printed out the recipe and will submit it to a higher authority.

Well the goodies are in the inside, so I'd have to go with pie?

That looks like a good queasy dilla! We should keep some flour tortillas on hand more often. You can make a full meal out of a snack...
