With a hydrometer, keep testing the apple cider for alcohol content.
Don't let it turn to vinegar. When the effervesence ceases, it's done, and will begin to turn. Anyway, as soon as it slows down, and the alky content is at it's highest..... FREEZE the concoction, solid. Then pour out the "Applejack" alcohol. Ass kickin' great stuff, for what ails ya! |

Used to be easy, get a few gallons of unpasturized apple juice from the Orchard, crack the seal. set it by the stove for a few weeks, then on night of first hard freeze, set it out.
When it's 1/2 to 3/4 frozen ... pour off the unfrozen solid part and bottle it. Works with cheap beer or wine also. Regards, ... |
