Default Hot 'N' Spicy Skirt Steak

From John Wayne's All Time Best Meat Recipes:

This recipe has two things Duke loved -- steak and spice.

Serves 6

Provisions

SALSA CRIOLLA

4 plum tomatoes, seeded and chopped

2 red bell peppers, seeded and chopped

1 small white onion, finely diced

2 garlic cloves, minced

1/4 cup packed flat leaf parsley leaves, minced

1/2 cup olive oil

1/4 cup white wine vinegar

Kosher or fine sea salt and pepper to taste

STEAK

1 cup packed flat leaf parsley

1 cup packed basil leaves

3 green onions, roughly chopped

1 small jalapeno, seeded, deveined and chopped

2 garlic cloves, chopped

1/4 cup olive oil

2 tbsp white wine vinegar

1-1/2 tsp kosher or fine sea salt

1 tsp pepper

2-1/2 lb skirt steak

vegetable oil for grill

DIRECTIONS

SALSA

1. Combine all ingredients in a mixing bowl. Season to taste with salt and pepper. Cover with plastic wrap and let sit at least 30 minutes at room temperature or in the refrigerator for up to 3 days.

STEAK

1. Place parsley, basil, green onions, jalapeno, garlic, olive oil, vinegar, salt and pepper in a food processor and process, scraping down the sides a few times, until fully combined and the mixture forms a thick paste.

2. Lay the steaks on a baking sheet and slather on both sides with the herb paste. Cover with plastic wrap and let sit at room temperature for 30 minutes.

3. Prepare the grill for direct heat and preheat to high.

4. Pat steaks dry with paper towels, leaving some of the herbs on the steak. Brush the grates of the grill with oil and cook, with the lid closed, 3-4 minutes per side. Let steak rest for 10 minutes before serving. Serve with salsa.

My dad used to mix up something similar for when we went out on picnics. He would put it all in a zip loc bag overnight, then when we went out to the desert, he'd start a campfire with mesquite and then put a grill on rocks over the coals and grill the meat. With a nice char on the outside it, it made for a great finger food.

He always just called it, Carne Asado.

Skirt steak has gone way up in price from what it used to be.

Mesquite is some of the best smoking wood I ever used. Probably plentiful in the South west where you guys are at but none in the N. east or Florida here that I know of?
BBQ places truck in mesquite and the smoke scent draws customers in for miles.

When Dad made it, he cut the steak into roughly 2" wide strips. Then we ate them in a flour tortilla with the salsa on it.
