Cool Green garlic?

For some reason I have noticed that when I pickle and can garlic it will sometimes turn a bluish green color almost like it is molded but that is impossible since it has turned right after coming out of processing. It taste fine it just turns color. Anyone know why this is or how to prevent it?

We've noticed that when we pickled green beans and okra. Ate it and no ill effects. Don't know why that happens, though.

Are you using white vinegar? What else are you putting in it? Maybe it's picking up the color from something else.

Using white vinegar, salt and water. I added the whole cloves with my jalapeņos along with red onion. Sterilized jars boiled for 15 min then added pickling liquid and contents then water processed for 15 min. This is high acid so I figure I do not have to pressure can. Right?
