I wash the chicken and leave hot soapy water in another sink and wash my hands before touching anything after touching the chicken.

If you are not buying the much more expensive air chilled chicken, then your chicken comes pre washed in bleach water with all of the other chicken produced during that production run.

Yup I learned early boon do NOT eat raw chicken. Boy Scout overnighter a hike along our beach in Conn. too our Scout camp. Set up tents get firewood build a fire sent up tents damn this is fun.
Dinner time. WWII vet Scout leader comes and tosses us each a half a chicken. Cook it eat it. Holy sheet I think this guy still thought he was on Iwo Jima. Mom never showed me how to cook this stuff. "Just cook it and eat it troop." Holy sheet o.k..
About 10:00 hrs. half of D Troop was puking at the latrine. They almost had to call the damn Nat. Guard.

I have a whole bunch of chicken wings out on the Ugly Drum Smoker right now - using hickory chips today.

Between the smoke and the heat, I should be okay for another day.

Nowadays if you eat under cooked chicken you are going to get sick. People can eat raw or undercooked hamburger and get away with it, but not chicken. I guess they process chicken in dirty ass places. Doesn't make sense to me.
